• 3 garlic.
  • One egg yolk.
  • 250 cc of extra virgin olive oil.
  • Vinegar or lemon
  • Salt.




– Chop the garlic in a mortar.

– When the garlic is minced, add the yolk of an egg (at room temperature) and a little salt, and we move it gently in the mortar, in a clockwise direction.

– We continue moving the mortar and begin to add the olive oil little by little, but constantly, in a trickle, while stirring with the other hand, until we obtain a dough that thickens like mayonnaise.

– To finish, add a splash of lemon or vinegar, stir two or three times again and that’s it.
